Description

Cheese Base

  • 1 brie wheel
  • 6 oz triple creme brie (room temperature, rind removed)
  • 2 oz cream cheese (room temperature)

Cherry Mix

  • 2 tbsp cherry jam
  • 2 tbsp dried & sweetened cherries (chopped)

Garnishes

  • ¼ cup pistachios (chopped, divided)
  • 10 bada bing cherries in syrup (with stem, pitted)
  • Flaky salt (to taste)
  • Honey (to taste)

Instructions

  1. Slice the Brie Crosswise: Place the brie wheel flat on a cutting board and carefully slice it horizontally through the middle to create a top and bottom half. Set the top half aside.
  2. Make the Whipped Brie: In a food processor, blend the triple creme brie (with rind removed) and cream cheese until smooth and creamy. Divide this mixture into two separate bowls. To one bowl, stir in the cherry jam, chopped dried cherries, and half the chopped pistachios to create the whipped cherry brie.
  3. Assemble the Brie Cake: Spread the whipped cherry brie evenly over the cut side of the bottom brie slice. Place the top brie half back on top and gently press. Use a butter knife or spreader to smooth out the edges around the cake. Refrigerate the assembled cake for 30 minutes to allow it to set.
  4. Finish and Serve: Spread the remaining plain whipped brie over the top of the cake. Sprinkle with the remaining pistachios. Remove the bada bing cherries from syrup, pat dry with a paper towel, and trim the stems evenly. Arrange the cherries on top of the brie cake. Chill uncovered for another 30 minutes. Just before serving, sprinkle the top with flaky sea salt and drizzle with honey. Serve the brie cake with toasted baguette slices and enjoy.
