Description

A delightful Strawberry Crisp featuring juicy fresh strawberries baked under a crunchy oat and brown sugar topping with hints of lemon and cinnamon, perfect for a comforting dessert served warm with a scoop of vanilla ice cream.

Ingredients

Scale

Strawberry Filling

  • 2 lb. fresh strawberries (5 to 6 cups), hulled and quartered
  • 1/4 cup cornstarch
  • 2 tablespoons granulated sugar
  • 1 lemon, zested
  • 2 tablespoons fresh lemon juice

Crisp Topping

  • 1/2 cup (1 stick) butter, melted, plus more for pan
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup packed light brown sugar
  • 1/2 cup chopped walnuts (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt

For Serving (optional)

  • Homemade vanilla ice cream

Instructions

  1. Preheat and Prepare Filling: Preheat your oven to 350°F. In a large bowl, combine the hulled and quartered strawberries, cornstarch, granulated sugar, lemon zest, and lemon juice. Mix gently until the strawberries are well coated. Transfer this mixture into a buttered 2-quart baking dish or a 9-inch pie dish.
  2. Make the Topping: In a medium bowl, mix together the all-purpose flour, old-fashioned oats, packed light brown sugar, chopped walnuts (if using), ground cinnamon, and kosher salt. Pour the melted butter over the dry ingredients and stir until the mixture becomes crumbly and well coated.
  3. Assemble and Bake: Evenly sprinkle the crumbly topping over the strawberry mixture in the baking dish. Note that you may have some topping left over if your baking dish is smaller; store it in the refrigerator to use for another crisp. Bake in the preheated oven for 45 to 50 minutes until the fruit filling is bubbling and the topping has turned golden brown.
  4. Cool and Serve: Allow the crisp to cool slightly before serving to let the juices thicken a bit. Serve warm and optionally top with homemade vanilla ice cream for a perfect finishing touch.

Notes

  • If you prefer a nuttier texture, walnuts can be included in the topping, but they are optional.
  • Make sure to butter the baking dish well to prevent sticking and add flavor.
  • Leftover crisp topping can be refrigerated and used for future crisps or desserts.
  • For best results, serve the crisp warm so the topping stays crunchy and the filling remains juicy.
  • You can adjust sugar levels based on the sweetness of your strawberries and personal preference.
