Cream Mixture

- 1 cup brewed espresso

Instructions
- Whip Cream Mixture: In the large bowl of a stand mixer fitted with the whisk attachment or using a handheld mixer, beat the heavy cream, confectioners’ sugar, and kosher salt on medium-high speed until soft peaks form, about 2 to 3 minutes. Then add the Greek yogurt, mascarpone, and vanilla extract and continue to beat on low speed until the mixture is incorporated and stiff peaks form, approximately 1 minute.
- Prepare Espresso Mixture and Ladyfingers: In a tall vessel, combine the brewed espresso and rum extract. Break ladyfingers in half for easy layering.
- Layer the Trifles: Divide about a heaping 1/4 cup of the cream mixture among the mason jars for the first layer. Dunk 3 pieces of ladyfinger halves in the espresso mixture briefly, then layer them over the cream. Repeat layering cream and espresso-soaked ladyfingers three more times, finishing with a layer of cream. This results in 4 cream layers and 3 ladyfinger layers per jar.
- Chill and Serve: Serve the tiramisu trifles immediately if desired or refrigerate for at least 8 hours and up to 12 hours to let flavors meld. Just before serving, dust the tops with unsweetened cocoa powder for a classic finishing touch.

- For best flavor, use freshly brewed espresso for soaking the ladyfingers.
- You can adjust the sweetness by adding more confectioners’ sugar to the cream mixture if preferred.
