Ingredients

Scale

Main Ingredients

  • 1 large head of cabbage, cut into 1/2“-thick rounds
  • Extra-virgin olive oil, for brushing
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch crushed red pepper flakes

Toppings

  • Chopped cooked bacon, for serving
  • Crumbled blue cheese, for serving
  • Freshly chopped scallions, for serving
  • Ranch dressing, for serving

Instructions

  1. Preheat the grill: Heat your grill to medium-high heat to ensure it’s hot and ready for cooking the cabbage steaks evenly.
  2. Prepare the cabbage steaks: Brush both sides of the 1/2-inch thick cabbage rounds generously with extra-virgin olive oil and season with kosher salt, freshly ground black pepper, and a pinch of crushed red pepper flakes for a bit of heat.
  3. Grill the cabbage: Place the cabbage steaks directly on the grill grates and cook for about 5 minutes on each side, or until the cabbage is tender and nicely charred, turning carefully to keep the steaks intact.
  4. Add toppings and serve: Remove the grilled cabbage steaks from the grill, top each with chopped cooked bacon, crumbled blue cheese, and freshly chopped scallions. Drizzle ranch dressing over the top to finish and serve immediately while warm.

Notes

  • Use a large, firm cabbage to ensure the steaks hold together on the grill.
  • You can omit bacon to make it vegetarian-friendly; extra blue cheese or a drizzle of balsamic glaze works well as a substitute.
  • Adjust the grilling time based on your grill’s heat intensity; cabbage should be tender but not mushy.
  • This dish can be served as a side or a light main course.
