  • 1 (12-oz.) can evaporated milk (1 1/2 cups)
  • 2 (5.3-oz.) packages Garlic & Herb Boursin cheese

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the fusilli corti bucati or other short pasta, stirring occasionally, and cook until al dente according to package directions. Reserve ½ cup of the pasta cooking water, then drain the pasta.
  2. Prepare the cheese sauce: While the pasta cooks, heat a large saucepan over medium-low heat and bring the evaporated milk to a gentle simmer. Add the two packages of Garlic & Herb Boursin cheese and stir continuously until the cheese has fully melted and combined with the milk, about 3 minutes. Allow the mixture to return to a simmer, stirring occasionally, until the sauce thickens slightly and develops a glossy texture, about 2 to 3 minutes. Season with ½ teaspoon kosher salt.
  3. Combine pasta and sauce: Add the drained pasta to the saucepan with the cheese sauce. Pour in a splash of the reserved pasta water and gently stir over medium-low heat, adding more pasta water as needed, until the sauce evenly coats the pasta. Taste and adjust seasoning with additional salt if necessary. Serve immediately for the creamiest texture.
