Ingredients

  • 4 cups shredded cooked chicken
  • 4 oz. cream cheese, softened
  • 1/4 cup Buffalo sauce
  • 3 scallions, thinly sliced
  • Kosher salt
  • Freshly ground black pepper
  • 3 cups shredded cheddar (about 8 oz.)
  • 3 cups shredded Monterey Jack (about 8 oz.)
  • 24 small flour tortillas
  • Ranch dressing, for serving

Instructions

  1. Step 1: Preheat the oven to 400°F. Line a baking sheet with parchment paper. In a large bowl, combine the shredded chicken, cream cheese, Buffalo sauce, and sliced scallions. Season the mixture with kosher salt and freshly ground black pepper to taste.
  2. Step 2: In a medium bowl, mix together the cheddar and Monterey Jack cheeses. Cut each tortilla in half. Sprinkle about one tablespoon of the cheese mixture on one half of a tortilla. Place about one tablespoon of the chicken mixture in the center of the tortilla half. Starting at the cut edge, fold the bottom quarter of the tortilla into a triangle, then continue rolling it into a cone shape. Repeat this process with the remaining tortillas, cheese, and chicken mixtures, reserving some cheese for topping.
  3. Step 3: Place a 3-inch wide cup or bowl in the center of the prepared baking sheet. Arrange the pointed end of each rolled tortilla against the cup, creating a ring shape around it. Once the first layer is complete, sprinkle some of the reserved cheese mixture over the tortillas. Add two more layers, arranging and topping each layer with cheese. Carefully remove the cup from the center once all layers are arranged.
  4. Step 4: Bake the quesadilla ring for 20 to 25 minutes, or until the cheese is melted and the centers of the cones are heated through.
  5. Step 5: Pour ranch dressing into a 3-inch ramekin and place it in the center of the quesadilla ring for dipping. Serve warm and enjoy!

Tips & Variations

  • For a milder flavor, reduce or omit the Buffalo sauce and add a little barbecue sauce instead.
  • Use cooked rotisserie chicken for convenience and extra flavor.
  • Try adding chopped cilantro or jalapeños to the chicken mixture for an extra kick.
  • Serve with other dipping sauces such as blue cheese or salsa for variety.

Storage

Store any leftover quesadilla ring in an airtight container in the refrigerator for up to 3 days. To reheat, bake in a 350°F oven for about 10 minutes until warmed through and cheese is melty again. Avoid microwaving to preserve the crispy texture.

How to Serve

The top row of rolled tacos is upright, showing the crispy, slightly toasted texture and some melted cheese peeking out. The bottom row is lying flat with visible orange melted cheese and bits of filling inside the tortillas. A woman's hand is dipping one of the rolled tacos into a smooth, creamy white sauce with green herbs in a small white bowl placed in the center of the plate. Ingredients

Scale

Chicken Mixture

  • 4 cups shredded cooked chicken
  • 4 oz cream cheese, softened
  • 1/4 cup Buffalo sauce
  • 3 scallions, thinly sliced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Cheese Mixture

  • 3 cups shredded cheddar cheese (about 8 oz)
  • 3 cups shredded Monterey Jack cheese (about 8 oz)

Other Ingredients

  • 24 small flour tortillas
  • Ranch dressing, for serving

Instructions

  1. Preheat and Prepare Chicken Mixture: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large bowl, combine the shredded cooked chicken, softened cream cheese, Buffalo sauce, and sliced scallions. Season this mixture with kosher salt and freshly ground black pepper to taste; mix thoroughly until well combined.
  2. Assemble Tortilla Cones: In a separate medium bowl, mix together the shredded cheddar and Monterey Jack cheeses. Cut each tortilla in half. On one half of each tortilla, sprinkle about 1 tablespoon of the cheese mixture. Place approximately 1 tablespoon of the chicken mixture in the center. Starting from the cut edge, fold the bottom quarter of the tortilla up into a triangle and then continue rolling it into a cone shape. Repeat this process with the remaining tortillas, cheese, and chicken mixture, reserving some cheese for topping the ring.
  3. Form the Quesadilla Ring: Place a 3-inch wide cup or bowl in the center of the prepared baking sheet. Arrange the rolled tortillas around the cup with the smaller, pointed ends facing inward against the cup, forming a ring. Sprinkle some of the reserved cheese mixture over the tops of the tortillas. Add two more layers of rolled tortillas on top, each time sprinkling additional cheese over them. Once done, carefully remove the cup from the center to leave a hollow ring in the middle.
  4. Bake: Bake the quesadilla ring in the preheated oven for 20 to 25 minutes, or until the cheese is melted and bubbly, and the centers of the cones are heated through.
  5. Serve: Pour ranch dressing into a small 3-inch ramekin and place it in the center hole of the quesadilla ring for dipping. Serve immediately while warm.
