Description

Delicious BBQ Chicken Flatbreads featuring tender, paprika-spiced chicken pieces topped with melty mozzarella, red onion, and capsicum on crispy flatbreads baked to perfection. A quick and flavorful meal perfect for lunch or dinner.

Chicken Marinade

  • 1 large boneless, skinless chicken breast, cut into small bite-sized pieces (or chicken thighs)
  • 1 tbsp olive oil
  • 1 tsp sweet paprika
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp sea salt flakes
  • ½ tsp freshly cracked black pepper

Flatbreads & Toppings

  • 4 flatbreads
  • 60 ml store-bought BBQ sauce or homemade
  • 150 g shredded mozzarella
  • 1 small red onion, finely sliced
  • 1 small capsicum (bell pepper), finely sliced
  • 1 tbsp freshly chopped coriander (cilantro), to garnish (optional)

Instructions

  1. Marinate the chicken: Place the bite-sized chicken pieces into a medium bowl. Add the olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, sea salt flakes, and freshly cracked black pepper. Use tongs to toss and evenly coat all the chicken pieces with the marinade.
  2. Cook the chicken: Heat a large, deep, heavy-based frying pan over medium–high heat. Add the marinated chicken pieces into the pan and cook for about 6 minutes, stirring occasionally, until the chicken is browned on all sides and fully cooked through. Remove from heat and set aside on a plate.
  3. Preheat the oven: Set your oven to 200°C (400°F) fan-forced or 220°C (425°F) conventional to get ready for baking the flatbreads.
  4. Prepare the flatbreads: Line a baking tray (or two trays if you have multiple flatbreads) with parchment paper. Lay the flatbreads flat on the prepared trays. Spread a thin and even layer of BBQ sauce over the surface of each flatbread.
  5. Add cheese and toppings: Sprinkle the shredded mozzarella cheese evenly across the BBQ sauce on each flatbread. Then, distribute the cooked chicken pieces over the cheese. Top with finely sliced red onion and capsicum to add flavor and crunch.
  6. Bake the flatbreads: Place the trays in the preheated oven. Bake for 8–10 minutes until the cheese is melted, bubbly, and slightly golden, and the flatbreads’ edges are crispy. If using two trays, position one tray at the top and one at the bottom of the oven, swapping them halfway through baking to ensure even cooking.
  7. Serve: Once baked, remove the flatbreads from the oven. Optionally sprinkle with freshly chopped coriander (cilantro) for a fresh garnish. Serve immediately while warm and enjoy.

Notes

  • 1. You can substitute chicken breast with chicken thighs for juicier meat.
  • 2. Use any store-bought or homemade flatbreads; naan or pita breads work well too.
  • 3. Coriander garnish is optional but adds a fresh herbal note to the dish.
