Ingredients

  • 3 Tablespoons (43g) unsalted butter, plus 3–4 more Tablespoons (43–56g) for the pan
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 Tablespoon granulated sugar
  • 1/8 teaspoon salt
  • 3/4 cup (180g/ml) whole milk, at room temperature
  • 1/2 cup (120g/ml) water, at room temperature
  • 2 large eggs, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract

Instructions

  1. Step 1: Melt 3 Tablespoons of butter in the microwave or on the stove and let cool for about 5 minutes.
  2. Step 2: Combine the cooled melted butter, flour, sugar, salt, milk, water, eggs, and vanilla in a blender or large food processor. Blend on medium-high speed for 20–30 seconds until silky-smooth. Alternatively, whisk thoroughly by hand in a large bowl.
  3. Step 3: Cover the batter and chill in the refrigerator for 30–60 minutes or up to 1 day. Stir gently if the batter looks separated before cooking.
  4. Step 4: Heat an 8-inch skillet or crepe pan over medium heat. Generously grease it with some of the reserved butter.
  5. Step 5: Pour 3–4 Tablespoons of batter into the center of the hot pan. Tilt and twirl the pan to spread the batter thinly and evenly.
  6. Step 6: Cook the crepe for 1–2 minutes until the bottom is set, then carefully flip using a spatula and cook the other side for 30 seconds.
  7. Step 7: Transfer the cooked crepe to a plate. Repeat greasing the pan and cooking with the remaining batter. Separate crepes with parchment paper if stacking.
  8. Step 8: Serve warm or at room temperature. Add fillings such as fresh fruit, chocolate, peanut butter, or savory sauces. Fold crepes over the filling as desired.

Tips & Variations

  • For thinner crepes, use closer to 3 Tablespoons of batter per crepe and tilt the pan well to spread the batter evenly.
  • If you don’t have a blender, whisking the batter by hand works fine—just be sure to mix until smooth.
  • Try sweet fillings like Nutella, lemon juice with sugar, or whipped cream, or savory options like sautéed mushrooms and cheese for variety.

Storage

Store leftover unfilled crepes in an airtight container in the refrigerator for up to 1 day. For longer storage, freeze crepes layered between sheets of parchment paper in a large zip-top bag for up to 1 month. Thaw at room temperature before filling and reheating if desired.

How to Serve

The image shows a white oval plate with seven thin crepes folded into triangles and arranged in two overlapping rows. The crepes are light golden brown with darker spots, and they are dusted lightly with powdered sugar. Fresh strawberries, both whole and halved showing the bright red inside, and a few dark blue blueberries are placed around and on top of the crepes for color. The plate is set on a white marbled surface with a small white bowl of whipped cream on the right and a gray bowl with a metal sifter and powdered sugar below. FAQs

Can I make the crepe batter ahead of time?

Yes, you can prepare the batter up to 1 day in advance and keep it refrigerated. Just give it a quick stir if it separates before cooking.

What is the best pan to use for making crepes?

An 8-inch nonstick skillet or a specialized crepe pan works best for even spreading and easy flipping, but any flat, smooth skillet will do as long as it’s well-greased.

Ingredients

Scale

Batter

  • 3 Tablespoons (43g) unsalted butter, plus 34 more Tablespoons (43–56g) for the pan
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 Tablespoon granulated sugar
  • 1/8 teaspoon salt
  • 3/4 cup (180g/ml) whole milk, at room temperature
  • 1/2 cup (120g/ml) water, at room temperature
  • 2 large eggs, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract

Instructions

  1. Prepare the melted butter: Melt 3 tablespoons of unsalted butter in the microwave or on the stovetop. Allow it to cool for about 5 minutes before incorporating it into the batter.
  2. Make the batter: In a blender or large food processor, combine the cooled melted butter, all-purpose flour, granulated sugar, salt, whole milk, water, eggs, and vanilla extract. Blend on medium-high speed for 20–30 seconds until the mixture is silky smooth and the consistency of cream. If you don’t have a blender, mix thoroughly by hand in a large bowl with a whisk. Cover the batter tightly and refrigerate for 30–60 minutes or up to 1 day. Stir gently if the batter separates before cooking.
  3. Heat and grease the pan: Place an 8-inch skillet or crepe pan over medium heat. Generously grease the pan with some of the reserved butter to prevent sticking and ensure even cooking.
  4. Cook the crepes: Once the skillet is hot, pour 3–4 tablespoons of batter into the center. Tilt and twirl the pan immediately to spread the batter thinly and evenly across the surface. Cook the crepe for 1–2 minutes until the bottom is set but not browned. Flip carefully using a small offset spatula or similar tool and cook the other side for 30 seconds until just set. Remove the crepe to a plate and repeat with the remaining batter, greasing the pan between each crepe.
  5. Serve and fill: Serve crepes warm or at room temperature. Add your favorite fillings in the center, then fold the sides over the filling. Some suggested toppings include melted chocolate, peanut butter, confectioners’ sugar with lemon, pesto, or hollandaise sauces.
  6. Store leftovers: Store any leftover unfilled crepes in an airtight container in the refrigerator for up to 1 day or freeze for up to 1 month, separating each with parchment paper. To reheat, thaw at room temperature and warm gently before filling.

Notes

  • Use room temperature ingredients for a smooth batter and even cooking.
  • Chilling the batter helps the flour fully hydrate and leads to more tender crepes.
  • Keep the pan well buttered between each crepe to prevent sticking and achieve a golden color.
  • Do not wait too long to flip; flipping when the bottom is just set prevents rubbery texture.
  • Crepes can be filled with sweet or savory ingredients such as fresh fruit, Nutella, whipped cream, ham, cheese, or sautéed vegetables.
  • Freeze crepes separated by parchment paper in a zip-top bag; thaw at room temperature before use.
  • Reheat gently in a warm skillet or microwave to avoid drying out.
