- 3 Tablespoons (43g) unsalted butter, plus 3–4 more Tablespoons (43–56g) for the pan
- 1 cup (125g) all-purpose flour (spooned & leveled)
- 1 Tablespoon granulated sugar
- 1/8 teaspoon salt
- 3/4 cup (180g/ml) whole milk, at room temperature
- 1/2 cup (120g/ml) water, at room temperature
- 2 large eggs, at room temperature
- 1 and 1/2 teaspoons pure vanilla extract
Instructions
- Prepare the melted butter: Melt 3 tablespoons of unsalted butter in the microwave or on the stovetop. Allow it to cool for about 5 minutes before incorporating it into the batter.
- Make the batter: In a blender or large food processor, combine the cooled melted butter, all-purpose flour, granulated sugar, salt, whole milk, water, eggs, and vanilla extract. Blend on medium-high speed for 20–30 seconds until the mixture is silky smooth and the consistency of cream. If you don’t have a blender, mix thoroughly by hand in a large bowl with a whisk. Cover the batter tightly and refrigerate for 30–60 minutes or up to 1 day. Stir gently if the batter separates before cooking.
- Heat and grease the pan: Place an 8-inch skillet or crepe pan over medium heat. Generously grease the pan with some of the reserved butter to prevent sticking and ensure even cooking.
- Cook the crepes: Once the skillet is hot, pour 3–4 tablespoons of batter into the center. Tilt and twirl the pan immediately to spread the batter thinly and evenly across the surface. Cook the crepe for 1–2 minutes until the bottom is set but not browned. Flip carefully using a small offset spatula or similar tool and cook the other side for 30 seconds until just set. Remove the crepe to a plate and repeat with the remaining batter, greasing the pan between each crepe.
- Serve and fill: Serve crepes warm or at room temperature. Add your favorite fillings in the center, then fold the sides over the filling. Some suggested toppings include melted chocolate, peanut butter, confectioners’ sugar with lemon, pesto, or hollandaise sauces.
- Store leftovers: Store any leftover unfilled crepes in an airtight container in the refrigerator for up to 1 day or freeze for up to 1 month, separating each with parchment paper. To reheat, thaw at room temperature and warm gently before filling.
