Instructions
- Salt zucchini: Place the grated zucchini and diced onion on a large kitchen towel and sprinkle with 1/2 teaspoon of salt. Let sit for at least 10 minutes to draw out excess moisture.
- Cut corn: Use a sharp knife to carefully cut the kernels off the cob and transfer them to a large mixing bowl.
- Combine aromatics: Add the grated mozzarella and Parmesan cheeses, minced parsley, minced garlic, and lemon zest to the bowl with the corn kernels. Mix gently to combine.
- Drain zucchini: Wrap the salted zucchini and onion mixture tightly in the kitchen towel and wring out as much water as possible. The drier the mixture, the crispier the fritters will be.
- Mix vegetables: Add the drained zucchini and onion to the bowl with the corn and aromatics and stir well to combine all ingredients.
- Add binders: In a small bowl, mix together the flour and baking powder. Stir this dry mix into the vegetable mixture, then add the whisked egg and blend evenly to form a batter.
- Fry fritters: Heat a thin layer of avocado oil in a large frying pan over medium heat. When hot, scoop 1/4 cup portions of batter into the pan, gently pressing each into a 1/3-inch thick patty.
