Instructions

  1. Cook rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice with water in a rice cooker or on the stovetop until it is fully absorbed and tender.
  2. Season rice: In a small bowl, combine the rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice using a wooden spatula or spoon to avoid mashing the grains. Allow the rice to cool to room temperature.
  3. Fry tofu: Heat a non-stick pan over medium heat and optionally pan-fry the tofu strips with a little soy sauce until they turn golden and crispy on all sides, enhancing the flavor and texture.
  4. Spread rice: Place a nori sheet shiny side down on a bamboo sushi rolling mat. With wet hands to prevent sticking, spread an even, thin layer of the seasoned sushi rice over the nori, leaving about an inch of space at the top edge free.
  5. Roll sushi: Arrange the tofu strips, avocado slices, cucumber, and carrot strips evenly across the rice near the edge closest to you. Carefully lift the bamboo mat and roll it forward, pressing the ingredients firmly to form a tight sushi roll. Moisten the uncovered edge of the nori with a little water to seal the roll securely.
  6. Slice sushi: Using a sharp knife dipped in water (to prevent sticking), slice the sushi roll into bite-sized pieces. Serve immediately with soy sauce for dipping.
