Ingredients
Scale
Broth and Aromatics
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 6 cups vegetable broth
- 2 tablespoons soy sauce or tamari
- 1 1/2 tablespoons miso paste (white or yellow)
- 2 teaspoons rice vinegar
- 1 teaspoon chili paste or sriracha (optional)
Main Ingredients
- 8 ounces shiitake mushrooms, sliced
- 12 ounces extra-firm tofu, cubed
- 3 baby bok choy, halved lengthwise
- 8 ounces egg-free ramen noodles
- Water, as needed for cooking ramen noodles
Garnishes
- 2 green onions, sliced
- Fresh cilantro, for garnish (optional)
Instructions
- Sauté Aromatics: In a large pot over medium heat, heat the sesame oil. Add the minced garlic and ginger, and sauté for 2-3 minutes until fragrant, releasing their flavors into the oil.
- Whisk Broth: Pour in the vegetable broth, then add soy sauce, miso paste, rice vinegar, and chili paste if using. Whisk thoroughly until the miso paste completely dissolves, creating a flavorful base.
- Simmer Broth: Bring the broth to a gentle simmer. Add the sliced shiitake mushrooms and cubed tofu. Allow the broth to simmer for 15 minutes so the flavors meld and the mushrooms soften.
- Cook Bok Choy: Add the halved baby bok choy to the pot. Let it simmer for an additional 5 minutes until the bok choy becomes tender but still retains some crispness.
- Cook Noodles: While the broth simmers, cook the ramen noodles according to package instructions in boiling water. Drain the noodles and set aside.
- Assemble Bowls: Divide the cooked noodles among serving bowls. Ladle the hot broth filled with tofu, mushrooms, and bok choy over the noodles. Top each bowl with sliced green onions and fresh cilantro if desired for a fresh finish.
Notes
- For a spicier ramen, increase the amount of chili paste or sriracha according to taste.
- Ensure to use egg-free ramen noodles to keep the dish vegan.
- Extra-firm tofu works best as it holds shape during simmering.
- Miso paste should not be boiled vigorously to preserve its delicate probiotics; gentle simmer is recommended.
- Fresh cilantro garnish is optional but adds a fragrant brightness to the dish.
