Wet Ingredients

  • 1/2 cup (120ml) pure maple syrup
  • 1/4 cup (56g) coconut oil, melted
  • 1/4 teaspoon almond extract
  • 1 Tablespoon pure vanilla extract

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 300°F (149°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, slivered or sliced almonds, ground cinnamon, and salt. Toss these together so they are evenly distributed.
  3. Combine Wet Ingredients: In a medium bowl, whisk together the pure maple syrup and melted coconut oil until well combined. Then whisk in the almond extract and pure vanilla extract, stirring until fully incorporated.
  4. Coat Oats Mixture: Pour the wet mixture over the dry ingredients in the large bowl. Toss thoroughly to make sure all of the oats and almonds are evenly coated with the syrup and oil mixture.
  5. Spread and Bake: Spread the coated granola mixture in an even layer on the prepared baking sheet. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even toasting and to prevent burning.
  6. Cool to Crunch: Once the granola is baked to a golden crisp, remove it from the oven and allow it to cool completely on the baking sheet. Cooling is important as it allows the granola to become crunchy.
