- 1 cup (180g) semi-sweet chocolate chips (mini or regular size)
- 3/4 cup (50-60g) shredded sweetened coconut
- 1/2 cup (70g) chopped pecans
- 3/4 cup (8 ounces/226g) sweetened condensed milk (not a full can)
- Optional: Extra butterscotch chips for topping
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, making sure there is enough overhang on the sides to lift the bars out easily once baked. Set aside.
- Cream Butter and Sugar: In a large bowl, use a stand or handheld mixer to cream together the softened butter and light brown sugar on medium speed for about 2 minutes until the mixture is smooth and well combined. Add the vanilla extract and the egg, then beat until fully incorporated, scraping down the bowl sides as needed.
- Mix Dry Ingredients and Butterscotch Chips: With the mixer on low speed, gradually add the flour, graham cracker crumbs, baking powder, and salt into the wet mixture. Mix until just combined, then fold in the butterscotch chips gently.
- Bake Base Layer: Press the graham cracker dough evenly into the prepared baking pan. Bake this base layer for 5 minutes at 350°F (177°C). Remove from the oven once baked.
- Add Layers and Sweetened Condensed Milk: Evenly layer the semi-sweet chocolate chips, shredded sweetened coconut, and chopped pecans over the partially baked crust. Drizzle the sweetened condensed milk evenly on top—use about 8 ounces, which is just over half of a standard 14-ounce can. Optionally, sprinkle a few extra butterscotch chips on top for added texture.
- Bake to Finish: Return the pan to the oven and bake for about 30 minutes until the bars are set. To prevent over-browning, loosely cover the pan with aluminum foil halfway through baking, and rotate the pan a couple of times during baking for even heat distribution.
- Cool and Chill: After baking, allow the bars to cool at room temperature for 30 minutes. Then place the pan in the refrigerator to cool completely, which helps the bars set firmly. Once chilled and the bottom is cold, lift the bars out using the parchment overhang and cut into squares.
- Storage: Store the bars at room temperature in an airtight container. They will stay fresh for up to one week.
Notes
- Do not use the entire can of sweetened condensed milk; only about 8 ounces (a little more than half) is needed to achieve the perfect gooey layer.
- Using mini semi-sweet chocolate chips allows for more even distribution but regular-sized chips work fine as well.
- Line the pan with parchment paper with an overhang to make lifting out the bars easy for cutting.
- Loosely covering with foil halfway through baking prevents the top from browning too much while ensuring the bars set properly.
- Refrigeration after baking helps firm up the bars for clean slicing.
- You can customize the nuts with walnuts or almonds if preferred.
