Instructions
- Simmer tomatoes: Place the Roma tomatoes, chopped onion, garlic cloves, bay leaf, and black peppercorns in a medium saucepan with a splash of water. Bring to a simmer and cook for about 15 minutes until the tomatoes are soft and the flavors meld.
- Blend sauce: Remove the bay leaf from the tomato mixture. Add dried oregano, ground cumin, salt, distilled white vinegar, and chicken broth. Blend until smooth. Return the sauce to the pan and warm it through gently, adjusting consistency with additional broth if necessary.
- Prepare chile sauce: In a small pot, combine dried arbol chiles, one garlic clove, and chopped onion with 1/2 cup water. Bring to a boil and simmer for about 15 minutes until the chiles are softened. Blend the mixture with distilled white vinegar and a pinch of kosher salt until smooth. Strain the sauce if a smoother texture is desired.
- Assemble bread: Slice the birotes salados or crusty bread rolls in half horizontally. Spread a thin layer of warmed refried beans inside each half. Optionally, toast the bread lightly for extra crunch. Meanwhile, warm the pork carnitas in a pan until heated through.
- Serve: Open the toasted bread halves and fill each with warm pork carnitas. Spoon the prepared tomato sauce generously over the meat, then drizzle the spicy chile sauce on top. Garnish with pickled red onions and serve with lime wedges on the side for squeezing over the sandwich.

- Substitute birotes salados with crusty bolillo or French rolls if unavailable.
- Adjust the number of dried arbol chiles in the chile sauce to control heat level.
