Sweet Potatoes

  • 1 tablespoon coconut oil, melted

  • 1 cup mango, diced
  • 1 large avocado, cubed
  • 2/3 cup cucumber, diced
  • 1/4 cup fresh mint, thinly sliced and lightly packed
  • 1/4 cup fresh cilantro, diced and packed
  • Sea salt, to taste

Dressing

  • 4 teaspoons fresh lime juice
  • 2 teaspoons fish sauce (paleo-friendly if needed)

Instructions

  1. Grill the sweet potatoes: Preheat your grill to high heat. Toss the sweet potato slices in melted coconut oil ensuring each piece is well-coated. Place them onto the grill and cook for 3-4 minutes per side until distinct grill marks appear and they are tender. Remove from the grill and allow to cool slightly.
  2. Prepare the sweet potato cubes: Once cool enough to handle, cut the grilled sweet potato slices into small cubes and transfer them to a large mixing bowl.
  3. Combine the salad ingredients: Add the diced mango, cubed avocado, diced cucumber, thinly sliced mint, and chopped cilantro to the bowl with the sweet potatoes. Gently stir to combine all ingredients evenly.
  4. Make the dressing: In a small bowl, whisk together the fresh lime juice and fish sauce until well blended.
  5. Dress the salad: Pour the lime and fish sauce dressing over the salad mixture, then toss gently to coat all ingredients. Season to taste with sea salt, adjusting as needed.
