Ingredients
Scale
Cookie Dough
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1 whole large egg
- 1 teaspoon vanilla extract
- 3 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1 1/3 cups all-purpose flour
- 1/2 cup semi-sweet chocolate (melted)
Frosting
- 1/2 cup butter
- 2 tablespoons cocoa powder
- 3 tablespoons milk
- 1 teaspoon white vinegar
- 2 1/2 cups powdered sugar
Instructions
- Preheat Oven: Preheat your oven to 350º F (175º C) to ensure it’s ready for baking your cookies.
- Cream Butter and Sugar: In an electric mixer, cream together the softened butter and granulated sugar until well combined and creamy, then add the egg and vanilla extract, beating until fully incorporated.
- Mix Dry Ingredients: Add cocoa powder, baking powder, salt, cinnamon (if using), and flour to the butter mixture and mix until a batter forms. Stir in the melted semi-sweet chocolate until evenly combined.
- Shape Cookies: Scoop 18 balls of dough onto a lined baking sheet, spacing them apart to allow spreading.
- Bake Cookies: Bake for 8 minutes, or until the cookies are just dry on the top. Avoid overbaking to keep them soft and chewy.
- Cool Cookies: Remove the baking tray from the oven and allow the cookies to cool completely on the tray.
- Prepare Frosting: While cookies cool, melt butter in a saucepan, then whisk in cocoa powder, milk, white vinegar, and powdered sugar until smooth and pourable. Add more milk if necessary, one teaspoon at a time, to reach the right consistency.
- Frost Cookies: Pour the frosting over the cooled cookies while they are still on the baking tray, spreading it evenly to cover all cookies.
- Set Frosting: Let the cookies sit for a couple of hours so the icing can fully set.
- Store: Once set, remove the cookies and store them in an airtight container for up to 3 days.
Notes
- Do not overbake the cookies to ensure they remain soft and chewy.
- If the frosting is too thick, add milk in small increments to thin it out to your desired consistency.
- Optional cinnamon adds a subtle warmth and depth to the cookie flavor.
- Make sure cookies are completely cooled before frosting to prevent melting the icing.
- Store in an airtight container at room temperature for best freshness.
