Description

This Strawberry Lemonade Dream Pie is a refreshing, no-bake frozen dessert featuring a crisp graham cracker crust filled with a creamy blend of strawberry ice cream and pink lemonade concentrate. Topped with a luscious lemon-infused whipped cream and garnished with lemon zest and wedges, this pie is perfect for warm weather and special occasions.

Ingredients

Scale

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp unsalted sweet cream butter, melted

Filling

  • 1 qt strawberry ice cream
  • 8 oz pink lemonade concentrate, thawed
  • 8 oz Cool Whip, thawed

Whipped Cream Topping

  • 1 ½ cups heavy whipping cream
  • ¾ cup powdered sugar
  • 2 tsp pure vanilla extract
  • 2 tbsp lemon zest

Garnish

  • Lemon zest
  • Lemon wedges

Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 350°F. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter, mixing until evenly moistened.
  2. Assemble Crust: Lightly spray a pie pan with baking spray. Press half of the graham cracker mixture firmly into the bottom of the pie pan and press the remaining mixture evenly along the sides to form the crust.
  3. Bake and Cool: Bake the crust in the preheated oven for 10 minutes until set and fragrant. Remove from oven and allow to cool completely.
  4. Prepare Pie Filling: Let the strawberry ice cream sit at room temperature for about 20 minutes to soften. In a large bowl, whisk together the softened ice cream, thawed pink lemonade concentrate, and thawed Cool Whip until smooth and well combined.
  5. Fill and Freeze Pie: Pour the filling into the cooled pie crust, spreading it out evenly. Cover the pie and place it into the freezer overnight to set fully.
  6. Chill Mixing Bowl: Before preparing the whipped cream topping, chill a large mixing bowl in the freezer for 10 minutes to ensure the cream whips up light and fluffy.
  7. Prepare Whipped Cream: In the chilled bowl, combine heavy whipping cream, powdered sugar, vanilla extract, and lemon zest. Using a hand mixer, beat the mixture on medium-high speed for about 10 minutes until stiff peaks form.
  8. Decorate Pie: Spread half of the whipped cream evenly over the frozen pie filling. Transfer the remaining whipped cream to a piping bag and pipe decorative dollops around the edges of the pie. Garnish with additional lemon zest and lemon wedges for a fresh, bright finish.
  9. Final Freeze: Place the fully decorated pie back into the freezer for at least 2 hours to allow the whipped cream topping to firm up before serving.
  10. Serve: Remove the pie from the freezer, slice, and serve chilled. Enjoy this refreshing and tangy dessert!

Notes

  • For best results, allow the ice cream to soften enough to mix easily but not melt completely.
  • You can substitute Cool Whip with homemade whipped cream if desired.
  • Make sure the pie crust is completely cool before adding the filling to prevent melting.
  • Decorate with lemon zest and wedges just before serving to keep them fresh.
  • This pie can be stored in the freezer for up to 3 days; allow it to thaw for 10 minutes before slicing.
