Ingredients
Scale
Cheesecake Filling
- 16 oz (450 g) cream cheese, softened
- 1 cup (240 ml) heavy cream or Cool Whip
- 1 cup (120 g) powdered sugar
- 1 tsp vanilla extract
- 2 tbsp strawberry jam or puree (optional)
Graham Crust (Optional)
- 1 sleeve (10 crackers) graham crackers, crushed
- 3 tbsp melted butter
- 1 tbsp sugar (optional)
Strawberry Crunch Coating
- 1 cup crushed Golden Oreos
- 1 cup freeze-dried strawberries or Jell-O powder
- 2–3 tbsp melted butter (for coating)
Topping (Optional)
- Fresh strawberries or strawberry syrup
Instructions
- Prepare the Strawberry Crunch Coating: Pulse the Golden Oreos and freeze-dried strawberries in a food processor until finely crushed but still textured. Transfer to a bowl and stir in 2 to 3 tablespoons of melted butter until the mixture resembles coarse sand. Spread evenly on a baking sheet or parchment paper and set aside to dry slightly while preparing the rest.
- Make the Graham Crust (Optional): In a bowl, combine the crushed graham crackers, melted butter, and sugar if using. Mix until the crumbs are evenly coated. Press the mixture into a flat layer on a parchment-lined tray or silicone mold to form a crust. Freeze for 10 minutes to firm up the crust.
- Prepare the Cheesecake Filling: Using a mixer, beat the softened cream cheese until smooth and fluffy. Gradually add powdered sugar and vanilla extract, and mix well. If using strawberry jam or puree, fold it gently into the cream cheese. Finally, fold in the whipped heavy cream or Cool Whip carefully until fully incorporated and fluffy.
- Shape the Cheesecake Bites: Using your hands or a small cookie scoop, form the cheesecake filling into 1 to 2 inch balls, or press the mixture firmly into silicone molds if using. Place the shaped bites onto a parchment-lined tray and freeze until firm, about 1 to 2 hours.
- Coat and Set: Once the cheesecake bites are firm, roll each in the strawberry crunch coating mixture, ensuring an even and full cover. Place coated bites back on the tray and freeze for at least 20 minutes to set. Optionally, top with fresh strawberries or drizzle with strawberry syrup before serving.
Notes
- For a smoother texture, chill the cream cheese before whipping.
- The graham crust is optional but adds a nice texture base.
- You can substitute freeze-dried strawberries with Jell-O powder for a similar tart flavor.
- Use silicone molds for uniform shaped bites that are easy to remove.
- Keep the cheesecake bites frozen until ready to serve to maintain their shape.
- These bites can be stored in the freezer for up to 2 weeks in an airtight container.
