Ingredients
Scale
Chips and Cheese
- 1 bag plain kettle chips (unsalted)
- Parmigiano Reggiano to taste (about 1/2 to 1 cup grated)
Spice Mix
- 1 tbsp smoked paprika
- 1 tsp garlic salt or garlic powder
- 1.5 tsp onion powder
- 1 tbsp dried chives (plus more for topping)
- 1.5 tsp chile ancho powder
- 1 tsp monk fruit sweetener
- 1–2 tsp chipotle powder (adjust to taste)
- Seasoned salt to taste
- 1/2–1 tsp MSG (optional)
Instructions
- Spread Chips: Spread your kettle chips evenly on a baking sheet in a single layer to ensure they heat uniformly and get covered properly with cheese and spices.
- Grate Cheese: Generously grate Parmigiano Reggiano over the chips, ensuring every chip gets a nice cheesy coating for delicious flavor.
- Bake Chips: Bake the chips on the sheet at 300°F (150°C) for 8-12 minutes until the cheese melts and becomes slightly bubbly, infusing the chips with cheesy goodness.
- Mix Spices: While the chips bake, combine smoked paprika, garlic salt or powder, onion powder, dried chives, chile ancho powder, monk fruit sweetener, chipotle powder, seasoned salt, and MSG in a bowl to create the spice blend.
- Season Chips: Remove the warm chips from the oven and immediately toss them with the prepared spice mix, making sure each chip gets evenly coated with the flavorful seasoning.
- Assemble and Garnish: Top the seasoned chips with extra grated Parmigiano Reggiano and a sprinkle of dried chives for a fresh, herbaceous finish before serving.
Notes
- Adjust chipotle powder amount to control spiciness according to your preference.
- Use unsalted kettle chips to better control the saltiness of the final dish.
- MSG is optional but enhances the savory flavor; omit if you prefer to avoid it.
- Serve immediately after seasoning for best texture and flavor, as chips can get soggy if left too long.
- If you prefer a stronger cheese flavor, increase the amount of Parmigiano Reggiano.
