  • 1 tbsp dried chives (plus more for topping)
  • 1.5 tsp chile ancho powder
  • 1 tsp monk fruit sweetener
  • 12 tsp chipotle powder (adjust to taste)
  • Seasoned salt to taste
  • 1/21 tsp MSG (optional)

Instructions

  1. Spread Chips: Spread your kettle chips evenly on a baking sheet in a single layer to ensure they heat uniformly and get covered properly with cheese and spices.
  2. Grate Cheese: Generously grate Parmigiano Reggiano over the chips, ensuring every chip gets a nice cheesy coating for delicious flavor.
  3. Bake Chips: Bake the chips on the sheet at 300°F (150°C) for 8-12 minutes until the cheese melts and becomes slightly bubbly, infusing the chips with cheesy goodness.
  4. Mix Spices: While the chips bake, combine smoked paprika, garlic salt or powder, onion powder, dried chives, chile ancho powder, monk fruit sweetener, chipotle powder, seasoned salt, and MSG in a bowl to create the spice blend.
  5. Season Chips: Remove the warm chips from the oven and immediately toss them with the prepared spice mix, making sure each chip gets evenly coated with the flavorful seasoning.
