Smash Burger Tacos
- 1 pound ground beef
- 6 (5-inch) flour tortillas
- 2 teaspoons store-bought or homemade burger seasoning
- Kosher salt, to taste
- 6 tablespoons neutral oil, divided (such as vegetable or canola oil)
- 6 slices American cheese, divided
- 18 thin bread-and-butter pickle slices
- 1 cup shredded iceberg lettuce
- 3 tablespoons chopped yellow onion
- White sesame seeds, for garnish
Instructions
- Make Burger Sauce: In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, yellow mustard, and hot sauce. Stir until thoroughly mixed. This sauce can be made up to 3 days in advance and kept covered in the refrigerator.
- Prepare Beef and Tortillas: Divide the ground beef into six portions, each about 2 1/2 ounces. Place each portion on a 5-inch flour tortilla and flatten the beef evenly with a fork, leaving a 1/2-inch border around the edge. Sprinkle 1/2 teaspoon of burger seasoning and a pinch of kosher salt over each beef layer.
- Cook Patties: Heat 2 tablespoons of neutral oil in a large skillet over medium-high heat, swirling to coat the pan. Place two tortillas beef-side down into the skillet. Press down firmly with a sturdy spatula or burger press to create a flat patty. Cook without moving for 2 to 3 minutes until browned and cooked through.
- Flip and Add Cheese: Flip the tacos carefully, then top each with a slice of American cheese. Cook for about 1 minute more, until the cheese is slightly melted. Transfer the cooked tacos to a baking sheet. Repeat this process with the remaining four tortillas, adding more oil as needed.
