Ingredients
Scale
Grains and Spices
- 2/3 cup uncooked quinoa (rinsed)
- 2 teaspoons fresh ginger (minced)
- 1 teaspoon ground turmeric
- 1 teaspoon sea salt
- Pinch of pepper
Liquids
- 4 cups turmeric golden milk
Vegetables
- 1/2 cup onion (roughly chopped)
- 1 large carrot (thinly sliced)
- 1 large red bell pepper (thinly sliced)
- 3 cups broccoli (roughly chopped)
- 3 cups spinach (tightly packed)
- 1 cup snow peas
Garnish
- Cilantro (for garnish)
Instructions
- Combine ingredients: In the bottom of a 7-quart slow cooker, stir together the rinsed quinoa, minced fresh ginger, ground turmeric, sea salt, and a pinch of pepper until well mixed.
- Add liquids and initial vegetables: Pour in the turmeric golden milk and stir to combine the mixture. Then add in the roughly chopped onion, thinly sliced carrot, and thinly sliced red bell pepper, mixing them evenly with the quinoa and spices.
- Cook quinoa mixture: Cover the slow cooker with the lid and cook on low heat for about 3 hours. The quinoa will absorb all the golden milk and become nice and fluffy.
- Add remaining vegetables: After the initial cooking time, add the roughly chopped broccoli, tightly packed spinach, and snow peas to the slow cooker. Stir gently to combine.
- Continue cooking vegetables: Cover the slow cooker again and cook for an additional 30 to 45 minutes on low, or until the vegetables are tender yet still vibrant.
- Garnish and serve: Once cooking is complete, garnish the dish with fresh cilantro leaves. Serve warm and enjoy this nutritious, flavorful vegetable quinoa.
Notes
- Rinse the quinoa thoroughly before cooking to remove its natural bitterness.
- Turmeric golden milk can be homemade or store-bought; it adds a warm, spiced flavor and creaminess.
- Adjust salt and pepper according to taste preferences.
- For a vegan version, ensure the turmeric golden milk is plant-based.
- If you prefer crisper vegetables, reduce the final cooking time slightly.
