Instructions
- Combine ingredients: Spray your slow cooker with cooking spray to prevent sticking. Add the uncooked quinoa, frozen corn, drained and rinsed chickpeas, black beans, chopped red pepper, chopped Roma tomatoes, roughly chopped onion, cumin powder, minced garlic, salt, and chipotle adobo sauce into the slow cooker. Stir well to evenly mix all ingredients.
- Cook: Pour in the reduced-sodium vegetable broth over the mixture and stir again to combine. Cover the slow cooker with the lid and set it to cook on high heat for 3 to 4 hours.
