Instructions

  1. Preheat Oven: Preheat your oven to 400℉ (204℃) and lightly spray a baking sheet with cooking spray. Set aside to prepare ingredients.
  2. Coat Potatoes: In a large bowl, combine the sliced sweet potatoes with 1 tablespoon of pure maple syrup. Rub thoroughly to coat each slice evenly, enhancing natural sweetness.
  3. Arrange Potatoes: Lay the coated sweet potato slices in a single layer on the prepared baking sheet. Lightly spray the tops with cooking spray and sprinkle with a pinch of salt for flavor balance.
  4. Prepare Pecans: In a small baking dish, toss together the finely chopped pecans with the remaining 1/2 tablespoon maple syrup, ensuring they are evenly coated. Spread the pecans out in a single, flat layer.
  5. Roast Potatoes and Pecans: Place both the baking sheet with sweet potatoes and the dish with pecans into the oven. Roast for 10 minutes, then check the pecans to make sure they are not burning. Pecans are done when they turn golden brown.
