Instructions

  1. Activate yeast: In a large bowl, combine the warm water, sugar, and instant yeast. Stir gently and let it sit for about 5 minutes until the mixture becomes frothy, indicating the yeast is active.
  2. Knead dough: Add the salt and melted butter to the yeast mixture. Gradually incorporate the flour, mixing until a soft dough forms. If sticky, add additional flour one tablespoon at a time until manageable. Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  3. Rise dough: Place the dough back into the bowl, cover with a clean towel, and let it rise in a warm area until doubled in size, approximately 45 minutes.
  4. Preheat oven and prepare boiling bath: Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper. Bring 8 cups of water and the baking soda to a rolling boil in a large pot.
  5. Shape bites: Turn the risen dough onto a lightly floured surface and divide it into 6 equal portions. Roll each portion into a rope about 15 to 20 inches long, then cut into 1.5 to 2-inch pieces to create the pretzel bites.
  6. Boil bites: Working in batches, gently drop the pretzel bites into the boiling baking soda water for 10-15 seconds. Remove them with a slotted spoon, allowing excess water to drain, and transfer to the prepared baking sheet.
  7. Season bites: Brush each boiled pretzel bite lightly with olive oil and sprinkle generously with coarse sea salt.
