  • 2 tablespoons onion chutney

Instructions

  1. Prepare the scones: Grease a large baking sheet and preheat the oven to 400°F (200°C) to ensure it’s ready for baking.
  2. Mix dry ingredients and dough: Sift together flour, sugar, baking powder, and salt into a large bowl. Add the leftover mashed potatoes and mix well. Rub in the margarine or butter with your fingers until the mixture resembles crumbs. Gradually add 3 tablespoons of milk and gently work the mixture to form a soft dough, adding 1 or 2 more tablespoons of milk if the dough feels too dry.
  3. Roll and cut scones: Lightly flour your work surface and rolling pin. Roll the dough out to about ⅓-inch thickness. Using a 2-inch cookie cutter, cut out 12 circles from the dough. Brush the tops of the scones lightly with additional milk for a glossy finish.
