  • 3 pounds beef chuck, trimmed and cut into large chunks
  • 2 pounds beef shank with bone
  • 1 large yellow onion, halved and studded with 2 whole cloves
  • 4 garlic cloves, crushed
  • 2 bay leaves
  • 12 whole black peppercorns
  • Salt, to taste

  • 5 small potatoes, halved
  • 4 large carrots, peeled and cut into chunks
  • 2 leeks, cleaned and cut into rings
  • 2 celery ribs, cut into chunks
  • 1 turnip, peeled and cut into chunks
  • 1 parsnip, peeled and cut into chunks

Instructions

  1. Simmer beef: In a large pot, combine the beef chuck, beef shank, onion studded with cloves, crushed garlic, bay leaves, black peppercorns, and a pinch of salt. Pour enough water over the ingredients to fully cover them. Bring the mixture to a gentle simmer over medium heat, carefully skimming off any foam that rises to the surface to keep the broth clear.
  2. Cook broth: Reduce the heat to low and allow the broth to simmer slowly for 2 to 3 hours, or until the beef becomes mostly tender. This slow simmer develops deep flavors and tenderizes the meat.
  3. Add vegetables: Add the halved potatoes, chopped carrots, leek rings, celery chunks, peeled turnip, and peeled parsnip to the pot. Continue simmering for another 30 to 60 minutes until all the vegetables are tender and the beef is fork-tender. Taste and adjust the salt as necessary before serving.
