Egg Mixture
- 8 large eggs
- 2 tsp. dried oregano
- 2 tbsp. skim milk
- 1 1/2 cups marinara sauce
- Freshly ground black pepper, to taste
Toppings
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sliced pepperoni
Instructions
- Preheat and Sauté Aromatics: Preheat your oven to 425°F (220°C). In a medium oven-proof skillet over medium heat, warm the olive oil. Add the diced onions and minced garlic, sautéing until the onions are tender and fragrant, about 5 minutes. Then add the baby spinach and cook until wilted, 2 to 3 minutes. Season the mixture with kosher salt to taste.
- Prepare Egg Mixture and Cook Edges: In a large bowl, whisk together the eggs, dried oregano, skim milk, and marinara sauce. Season with salt and freshly ground black pepper to taste. Pour this egg mixture over the sautéed vegetables in the skillet. Cook over medium heat just until the edges begin to set, approximately 4 to 5 minutes.
- Add Toppings and Bake: Sprinkle the shredded mozzarella cheese evenly on top, followed by the sliced pepperoni. Transfer the skillet to the preheated oven and bake until the eggs are fully set and the cheese is melted and slightly golden, about 5 to 6 minutes more. Remove from oven and let cool for a couple of minutes before slicing and serving.
