Instructions

  1. Prepare the Oven: Preheat your oven to 400°F (204°C) to ensure it’s hot and ready for baking the phyllo bites evenly and quickly.
  2. Prepare the Phyllo: Unroll the 8 oz package of phyllo dough. Remove about 10 sheets to use for this recipe. Immediately roll the remaining sheets back in plastic wrap to prevent them from drying out while you work.
  3. Assemble the Rolls: Lay the phyllo sheets flat on a clean surface. Brush melted butter between every 2-3 layers, using about 3 tablespoons in total. Evenly distribute the freshly grated Gruyere cheese over the top sheet. Then, carefully roll the sheets tightly lengthwise into a long cylinder to encase the cheese inside.
  4. Cut and Arrange: Brush each cup of a 12-cup muffin tin with some of the melted butter to prevent sticking. Using a sharp knife, slice the rolled phyllo cylinder into 12 even rounds. Place one round into each prepared muffin tin cup, ensuring they are evenly spaced.
  5. Bake the Bites: Brush the tops of each phyllo bite with about ½ tablespoon of melted butter. Bake in the preheated oven for 20-25 minutes or until the phyllo is golden brown and crispy. Start checking for doneness at about 15 minutes to avoid burning.
