  • 1 tablespoon extra-virgin olive oil

Dry Ingredients

  • 1/2 teaspoon sea salt
  • Generous pinch of pepper
  • 1 1/2 cups almond meal
  • 3 tablespoons tapioca starch
  • 4 teaspoons coconut flour

Instructions

  1. Preheat oven: Heat your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Process cauliflower: Place the cauliflower florets into a large food processor and pulse until the texture resembles rice or small crumbs. Transfer the processed cauliflower into a large microwave-safe bowl.
  3. Cook cauliflower: Microwave the cauliflower for 3 minutes, then stir it and continue microwaving for an additional 2 minutes to soften it adequately, ensuring moisture is reduced but not overly cooked.
  4. Mix aromatics: Add the diced onion, minced parsley, minced garlic, sea salt, and pepper to the cooked cauliflower. Stir thoroughly to combine all the flavors evenly.
  5. Add wet ingredients: Stir in the large egg white and the tablespoon of extra-virgin olive oil until the mixture is well incorporated, helping bind the ingredients together.
  6. Add flours: Finally, mix in the almond meal, tapioca starch, and coconut flour. Stir until the mixture thickens and becomes cohesive enough to hold its shape.
  7. Shape tots: Using a 1 tablespoon measuring spoon, pack the mixture and then gently remove the formed tot by tapping it into your hand. Alternatively, roll the mixture into small oval shapes about 1 tablespoon in size.
  8. Arrange tots: Place the formed tots onto the prepared baking sheet, spacing them evenly to allow for crisping during baking.
  9. Bake first side: Generously spray the tops of the tots with olive oil spray for crispness. Bake in the preheated oven for 25 minutes.
  10. Flip and bake second side: Carefully flip each tot over, spray the newly exposed side again with olive oil spray, and bake for an additional 9-10 minutes until the tots are golden brown and crispy on all sides.

  • Make sure to squeeze out any excess water from the microwaved cauliflower if it feels too wet, to achieve crispier tots.
  • You can substitute the olive oil spray with another neutral oil spray if preferred.
