Instructions

  1. Prepare the crust: Lightly grease an 8″-by-8″ baking pan with cooking spray, then line the bottom with parchment paper leaving a 2″ overhang on two opposite sides. Lightly grease the parchment with cooking spray as well for easy removal later.
  2. Mix crust ingredients: In a medium bowl, combine the finely crushed graham crackers, granulated sugar, melted butter, and kosher salt. Mix until the mixture resembles wet sand and holds together when pressed.
  3. Form the crust: Scrape the cracker mixture into the prepared pan and press firmly into an even layer using the back of a spoon or a measuring cup. Set aside.
  4. Make the vanilla layer: In a medium bowl, using a handheld mixer or a stand mixer fitted with a whisk attachment, beat the cream cheese, powdered sugar, and vanilla extract on medium-high speed until smooth and silky, about 3 minutes.

  7. Prepare the orange layer: In a medium heatproof bowl, pour the boiling water over the orange-flavored Jell-O gelatin. Whisk until the gelatin is completely dissolved.
  8. Cool the gelatin: Place the bowl in the refrigerator and let it cool until the mixture reaches room temperature, about 10 minutes, ensuring it does not begin to set.
  9. Fold in Cool Whip: Once the gelatin mixture is cooled, whisk in 2 cups of Cool Whip until well combined.
  10. Assemble orange layer: Spread the orange mixture over the chilled vanilla layer. Cover and refrigerate until the orange layer is set, which will take at least 1 hour and can be kept up to 3 days.
  11. Add the final topping: Spread the remaining 1 1/2 cups of Cool Whip evenly over the set orange layer.
  12. Slice and serve: Run a small offset spatula or thin knife around the edges of the pan to loosen the bars. Use the parchment overhang to lift the bars out onto a cutting board. Slice into squares and serve chilled.
