  • 1/4 cup freshly chopped cilantro
  • 2 green onions, thinly sliced

Dressing Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons harissa
  • 1 tablespoon honey
  • Juice and zest of 1 lime
  • 2 cloves garlic, minced
  • 2 teaspoons freshly grated ginger
  • 1 teaspoon ground cumin
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Salad: In a large bowl, combine the peeled and grated carrots, golden raisins, peanuts, freshly chopped cilantro, and thinly sliced green onions. Toss gently to mix all the ingredients evenly.
  2. Make the Dressing: In a medium bowl, whisk together the extra-virgin olive oil, harissa, honey, lime juice and zest, minced garlic, freshly grated ginger, and ground cumin until the dressing is smooth and well combined.
  3. Toss and Season: Pour the prepared dressing over the carrot mixture and toss thoroughly to coat all the ingredients with the spicy and tangy dressing. Taste and season with kosher salt and freshly ground black pepper according to your preference.
