- Food coloring in Halloween colors (such as orange, green, purple, black)

- Candy eyes (quantity based on number of monsters and eyes per cookie)
Instructions
- Prepare the frosting. In a medium bowl, beat the softened unsalted butter and powdered sugar together until combined. Mix in the vanilla extract and 2 to 3 tablespoons of milk or heavy cream, continuing to beat until the frosting is light and fluffy.
- Divide and color the frosting. Split the frosting into separate bowls depending on how many colors you want to use. Add a few drops of food coloring to each bowl and stir well until the color is vibrant.
- Prepare piping bags. Transfer each colored frosting into piping bags. You can use bags with no tip or a plain, round tip if you prefer.
- Pair the cookies. Match Chips Ahoy cookies into pairs by size and shape to ensure evenly sized sandwich cookies. Flip one cookie in each pair upside down to expose the flat side.
- Assemble the sandwich cookies. Pipe or spread a generous dollop of colored frosting onto the flat side of the flipped cookie. Gently press the matching cookie on top to create a sandwich.
- Add the monster eyes. While the frosting is still soft, press candy eyes into the sides of the frosting so they peek out, creating a monster appearance. Customize by adding one, two, or even three eyes per sandwich cookie.
- Set and store. Allow the frosting to set before serving. If storing for more than a day or two, place the cookies in an airtight container in the refrigerator. Note that condensation from refrigeration could cause candy eye colors to run in humid conditions.
