Instructions

  1. Mix cream cheese: In a bowl, combine the softened low-fat cream cheese with finely chopped chipotle in adobo until smooth and evenly blended, creating a spicy, smoky spread.
  2. Heat tortillas: Warm each flour tortilla (plain, tomato-flavored, and spinach-flavored) in the microwave or oven just until soft and pliable to make rolling easier.
  3. Spread fillings: Spread about 2 tablespoons of the chipotle cream cheese mixture evenly over each tortilla, followed by 1/4 cup of the low-fat refried black beans. Distribute pico de gallo, diced avocado, and chopped cilantro evenly on top of the beans.
