Mexican Chalupas Recipe

  • Author: lilan
  • Total Time: 25 minutes
  • Yield: 8 chalupas 1x

Description

Mexican Chalupas are a delightful traditional dish featuring crispy fried corn tortillas topped with fresh tomatillo salsa verde, shredded chicken, crisp lettuce, and crumbly queso fresco. Garnished with cilantro and optionally served with guacamole and diced tomatoes, this recipe brings the vibrant flavors of Mexico to your table with simple ingredients and easy frying technique.

Ingredients

Scale

Chalupa Base

  • Enough vegetable oil for shallow frying (about 1/4 inch deep in skillet)
  • 8 small corn tortillas

Toppings

  • 1 cup tomatillo salsa verde
  • 2 cups shredded cooked chicken breast
  • 1 cup shredded lettuce
  • 1 cup crumbled queso fresco
  • Chopped fresh cilantro for garnish

Optional Toppings

  • Guacamole (for serving)
  • Diced tomatoes (for serving)

Instructions

  1. Heat the oil: Pour enough vegetable oil into a heavy skillet to cover the bottom about 1/4 inch deep. Heat the oil over medium-high heat until it is hot but not smoking.
  2. Fry the tortillas: Gently place one corn tortilla into the hot oil. Fry it for about 1 minute until bubbles form along the edges, then flip it and fry the other side until it becomes crisp and lightly browned. Remove the fried tortilla with a slotted spoon and drain on paper towels. Repeat this process with the remaining tortillas.
  3. Assemble the chalupas: Spread about 2 tablespoons of tomatillo salsa verde evenly on each crispy fried tortilla. Top each with shredded chicken, shredded lettuce, and crumbled queso fresco. Garnish with chopped fresh cilantro and add optional toppings like guacamole and diced tomatoes if desired.

Notes

  • Use fresh tortillas for the best texture; day-old tortillas will not fry as well.
  • Fry the tortillas just until crisp but not overly browned to maintain slight pliability.
  • If you prefer a vegetarian option, substitute shredded chicken with seasoned sautéed vegetables or beans.
  • To reduce oil absorption, drain fried tortillas thoroughly on paper towels.
  • Tomatillo salsa verde can be homemade or store-bought for convenience.
