  • 1/2 cup fresh lime juice (from 7 to 8 limes)
  • 3 tbsp tequila blanco

Instructions

  1. Prepare Oven and Pan: Arrange a rack in the center of the oven and preheat it to 350°F. Line a 9-inch by 9-inch baking dish with parchment paper to prevent sticking.
  2. Make Crust Mixture: In a large bowl, combine the crushed mini pretzels, melted unsalted butter, and granulated sugar. Mix until the dry ingredients are fully coated and the mixture is evenly moistened.
  3. Form and Bake Crust: Press the pretzel mixture firmly and evenly into the bottom of the prepared baking dish. Bake the crust in the preheated oven for about 10 minutes, or until it becomes fragrant and slightly darkened. Remove from oven and transfer the pan to a wire rack to cool. Keep the oven on for the filling step.
  4. Prepare Filling: In a large mixing bowl, beat the eggs and granulated sugar together at medium speed using an electric mixer until the mixture is smooth and well combined. Add the all-purpose flour, lime zest, fresh lime juice, and tequila blanco, then beat again until fully incorporated.
  5. Assemble Bars: Pour the lime and tequila filling evenly over the cooled pretzel crust, spreading it out gently to cover the crust.
  6. Bake Bars: Return the baking dish to the oven and bake for 33 to 35 minutes, or until the filling is set and no longer jiggly in the center.
  7. Cool and Serve: Remove the bars from the oven and allow them to cool completely before slicing. Dust the bars with confectioners’ sugar and garnish with candied limes if desired for an appealing presentation.
