Tzatziki
- 1 Persian or 1/2 English cucumber, grated
- 1 clove garlic, finely chopped
- 1 cup Greek yogurt
- 1/2 cup chopped fresh mint
- 1/8 tsp kosher salt
Cucumber Salad
- 4 Persian or 2 English cucumbers, quartered lengthwise and sliced into 1/4” or 1/2” pieces
- 1/2 small yellow onion, finely chopped
- 1 cup quartered cherry tomatoes
- 2 tsp extra-virgin olive oil
- 1/2 tsp kosher salt
Cauliflower Rice
- 1 tbsp extra-virgin olive oil
- 12 oz frozen cauliflower rice
- 1/2 tsp kosher salt
- 1 tsp finely grated lemon zest
- 1/2 yellow onion, chopped
- 1 clove garlic, finely chopped
Turkey
- 1 tbsp extra-virgin olive oil
- 1 lb ground turkey
- 2 cloves garlic, finely chopped
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 3/4 tsp kosher salt
- 1/8 tsp freshly ground black pepper

- Peperoncini
Instructions
- Prepare the Tzatziki: Grate the Persian or English cucumber and finely chop the garlic. In a bowl, combine the grated cucumber, garlic, Greek yogurt, chopped fresh mint, and kosher salt. Mix well and set aside to allow flavors to meld.
- Make the Cucumber Salad: Quarter and slice the cucumbers, finely chop the yellow onion, and quarter the cherry tomatoes. Toss together with extra-virgin olive oil and kosher salt. Set aside.
- Cook the Cauliflower Rice: Heat 1 tablespoon of extra-virgin olive oil in a large skillet over medium heat. Add the frozen cauliflower rice in an even layer, cover, and cook undisturbed for 8 minutes. Then uncover and stir in the finely chopped garlic and salt. Continue cooking, stirring frequently, until some pieces begin to brown and garlic is fragrant, about 2 minutes. Transfer to a large bowl, stir in the lemon zest, and cover to keep warm.
- Cook the Turkey: In the same skillet over medium-high heat, heat a tablespoon of oil. Add the chopped yellow onion and cook, stirring occasionally, until translucent and softened, about 5 minutes. Add the ground turkey, garlic, dried oregano, smoked paprika, salt, and black pepper. Cook, breaking up the turkey and stirring occasionally, until the turkey is fully cooked and no longer pink and the liquid has evaporated, about 6 to 8 minutes.
- Assemble the Bowls: Divide the cauliflower rice, cooked turkey, and cucumber salad among serving bowls. Top each bowl with a generous dollop of the prepared tzatziki. Serve with peperoncini on the side for an added tangy kick.

- The cauliflower rice can be found frozen for convenience or made fresh by pulsing cauliflower florets in a food processor.
- For extra flavor, marinate the turkey briefly with the spices before cooking.
- Adjust the amount of garlic in the tzatziki to your taste, as it can be strong.
