Shrimp and Marinade
- 1 lb. large shrimp, peeled, tails removed
- 2 garlic cloves, grated
- Kosher salt, to taste
- 2 tbsp. toasted sesame oil
Glaze
- 1/4 cup honey
- 1/4 cup low-sodium vegetable broth
- 2 tbsp. gochujang or chili garlic sauce
- 1/4 tsp. kosher salt
- 2 scallions, thinly sliced (green and white parts separated)
For Serving
- Butterhead lettuce leaves
- Matchstick carrots
- Toasted sesame seeds
Instructions
- Prepare Shrimp: Pat the shrimp dry with paper towels. In a medium bowl, toss the shrimp with grated garlic and season generously with kosher salt to infuse flavor.
- Cook Shrimp: Heat toasted sesame oil in a large skillet over medium heat. Add the shrimp and cook for about 2 minutes on each side, until they turn pink and are cooked through. Transfer the cooked shrimp to a plate and set aside.
- Make Glaze: In the same skillet, whisk together honey, low-sodium vegetable broth, gochujang or chili garlic sauce, the white parts of the scallions, and 1/4 teaspoon kosher salt. Bring this mixture to a simmer and cook for 3 to 4 minutes, stirring occasionally, until it thickens into a glossy glaze. Remove from heat.
- Toss Shrimp in Glaze: Return the shrimp to the skillet and toss thoroughly to coat them evenly with the hot honey glaze.
- Assemble Lettuce Wraps: Divide the glazed shrimp among butterhead lettuce leaves. Top each wrap with matchstick carrots, the green parts of the scallions, toasted sesame seeds, and drizzle with any remaining glaze for an added burst of flavor. Serve immediately.
Notes
- You can substitute gochujang with another chili garlic sauce based on your preferred heat level.
- Butterhead lettuce works well due to its soft, flexible leaves, but you can also use bibb or romaine if preferred.
- For extra crunch, add chopped peanuts or cashews as a garnish.
- Adjust honey quantity for more or less sweetness depending on taste.
