These Healthy Taco Bowls feature seasoned ground beef cooked with onions and garlic, served over fresh iceberg lettuce and topped with vibrant tomatoes, radishes, cilantro, and a tangy yogurt lime crema. A perfect low-carb and flavorful meal that is easy to prepare and satisfying.

Ingredients

Scale

Beef Mixture

  • 2 lbs 80/20 ground beef (or any ground meat)
  • 1 large onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 tbsp olive oil
  • 6–8 tbsp Easy Homemade Taco Seasoning
  • Salt as needed

Bowls and Toppings

  • 1 head of iceberg lettuce
  • Tomatoes, cut into pieces
  • Lena’s Kitchen Pickled Onions (optional)
  • Cilantro
  • Radishes

Yogurt Lime Crema

  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 lime, juiced
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 1–2 tbsp water (to thin out the sauce)

Instructions

  1. Prepare the Yogurt Lime Crema: In a bowl, combine the plain Greek yogurt or sour cream, fresh lime juice, sea salt, garlic powder, and water. Whisk well until the mixture is smooth and slightly thinned. Set aside until ready to serve.
  2. Sauté the Onions: Heat olive oil in a large frying pan over medium heat. Add the chopped onion and sauté for 5-7 minutes until soft and translucent. Add the finely chopped garlic and cook for an additional minute to release its aroma.
  3. Cook the Ground Beef: Add the ground beef to the pan with the onions and garlic. Break the meat apart with a spatula and cook thoroughly until no pink remains, about 7 minutes.
  4. Season the Meat: Stir in the Easy Homemade Taco Seasoning and continue cooking for another 3 minutes, allowing the flavors to meld nicely into the meat. Adjust salt to taste.
  5. Assemble the Taco Bowls: Cut the head of iceberg lettuce into wedges and place on serving plates or bowls. Top each wedge with a generous portion of the cooked taco meat. Add chopped tomatoes, radishes, cilantro, and pickled onions if using.
  6. Finish with Crema and Seasoning: Drizzle the yogurt lime crema over the taco bowls and sprinkle a bit of extra taco seasoning on top for an added flavor kick. Serve immediately.

Notes

  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • For a dairy-free version, replace Greek yogurt with cashew cream or a dairy-free sour cream alternative.
  • Adjust the amount of taco seasoning based on your spice preference.
  • Pickled onions add a nice tangy crunch and are optional but recommended.
  • These taco bowls are low-carb friendly as they use lettuce instead of tortillas.
