Instructions
- Preheat oven: Preheat the oven to 350°F (175°C) to prepare for baking the dip.
- Blanch spinach: Bring a large pot of water to a rolling boil. Add the baby spinach and blanch for 1 to 2 minutes until it turns bright green and wilts slightly.
- Cool and strain spinach: Drain the spinach immediately and rinse under cold water to stop the cooking process.
- Squeeze and shred spinach: Once cooled, squeeze out as much excess water as possible from the spinach. Shred it finely with a knife to make it easier to mix into the dip.
- Mix ingredients: In a large bowl, combine the cottage cheese, sour cream, blanched spinach, minced garlic, sea salt, black pepper, oregano, half of the grated Parmesan cheese, and half of the feta cheese. Mix thoroughly until all the ingredients are well incorporated.
- Bake dip: Transfer the mixture into an oven-proof baking dish. Evenly sprinkle the remaining Parmesan and feta cheeses over the top. Bake in the oven for 20 to 25 minutes until the dip is hot and bubbly.
- Broil top: Switch the oven to the broiler setting and broil on high for a few minutes until the cheese on top turns golden brown and slightly crispy to your liking. Watch carefully to prevent burning.
- Serve: Remove from the oven and let cool slightly before serving with fresh vegetables, bread, or crackers.
