  • 2 chicken breasts, cut into 1-inch pieces
  • 2 cups cubed pineapple
  • 2 green bell peppers, diced
  • 1 red onion, diced

To Serve

  • White rice, cooked, for serving
  • 2 teaspoons fresh cilantro, chopped

Instructions

  1. Preheat the Grill: Preheat your grill or grill pan over medium heat to ensure it is hot and ready for cooking the skewers evenly.
  2. Prepare the Marinade: In a large bowl, whisk together the barbecue sauce, soy sauce, rice wine vinegar, sesame oil, minced garlic, minced ginger, and honey until fully combined. Season the mixture with kosher salt and crushed red pepper flakes, adjusting the amounts to your taste preference.
  3. Assemble the Skewers: Thread the skewers by alternating pieces of chicken, pineapple cubes, green bell peppers, and red onion onto skewers. Arrange the assembled skewers on a baking sheet and pour half of the marinade over them to start infusing flavor.
  4. Grill the Skewers: Place skewers on the preheated grill and brush with the reserved half of the marinade. Cook the skewers for 5 minutes on one side, then flip and brush the other side with marinade. Continue cooking for another 5 minutes or until the chicken is fully cooked and has a nice char.
