- 6 burrito size flour tortillas
- 2 lbs ground beef
- 1 small onion, finely diced
- 1 small bell pepper, finely diced
- 3 tbsp parsley, chopped
- 1½ cups shredded mozzarella cheese, divided
- 2 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp paprika
- 1 tbsp olive oil (for brushing)
Dipping Sauce
- 3 tbsp ketchup
- 6 tbsp mayonnaise
- ½ tsp garlic powder
- Salt, to taste
Instructions
- Preheat and prepare baking dish: Preheat the oven to 420℉. Lightly spray or brush a 7×11 inch baking dish with olive oil to prevent sticking.
- Mix filling: In a large bowl, combine the ground beef, finely diced onion and bell pepper, chopped parsley, 1 cup of shredded mozzarella, 2 teaspoons salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, and ¼ teaspoon paprika. Mix thoroughly until all ingredients are evenly combined.
- Assemble roll ups: Evenly divide the meat mixture among the 6 burrito-sized tortillas. Using your fingers, thinly and evenly spread the filling out close to the edges on each tortilla. Roll each tortilla tightly around the filling and then cut into 2½ inch long rolls.
- Arrange and bake: Place the rolls into the prepared baking dish with the cut side facing up. Lightly brush the tops with 1 tablespoon olive oil. Bake at 420℉ for 25 to 30 minutes until the meat is cooked through and the tortillas start to crisp.
- Add cheese and finish baking: Remove the baking dish from the oven, sprinkle the remaining ½ cup of shredded mozzarella evenly over the roll ups, and return to the oven. Bake until the cheese melts, about 5 minutes. Optionally, broil for 2–3 minutes at the end to achieve a golden bubbly top; watch carefully to prevent burning.
- Prepare dipping sauce: While the roll ups bake, whisk together in a small bowl the ketchup, mayonnaise, ½ teaspoon garlic powder, and salt to taste until smooth and creamy.
- Serve: Serve the hot ground beef tortilla roll ups with the garlic ketchup dipping sauce on the side for dipping.
Notes
- For best results, use fresh parsley and finely dice the vegetables small for even cooking.
- Adjust salt and spices according to your taste preference.
- If you prefer a crispier tortilla, broiling at the end is recommended but watch carefully to avoid burning.
