Ingredients
Scale
Chocolate Cake
- 1 package gluten-free/dairy-free chocolate cake mix (e.g., Bob’s Red Mill paleo chocolate cake mix)
Frosting & Coating
- 1/4 cup non-dairy vanilla frosting
- 3/4 cup non-dairy white chocolate chips
- 2 teaspoons coconut oil
Decorations
- Red frosting for decoration
- Green sprinkles for decoration
Instructions
- Prepare the cake: Follow the instructions on the gluten-free/dairy-free chocolate cake mix package to prepare the batter. Pour into a large sheet cake pan and bake as directed. Allow the cake to cool completely before proceeding.
- Cut Christmas tree shapes: Once the cake is cooled, use a Christmas tree-shaped cookie cutter to cut out as many tree shapes as possible. Approximately 20 trees can be cut from one cake, yielding 10 full cakes.
- Assemble the cakes: Use the non-dairy vanilla frosting to sandwich two Christmas tree shapes together, creating one cake. Place the assembled cakes on a parchment-lined baking sheet and freeze for about 1 hour to firm up.
- Prepare white chocolate coating: In a small heatproof bowl, melt the non-dairy white chocolate chips together with the coconut oil until the mixture is smooth and well combined.
- Coat and decorate: Dip or spoon the white chocolate coating over each sandwich cake, covering it completely. While the coating is still wet, sprinkle green sprinkles on top. Allow the coating to harden fully.
- Final decoration: Once the white chocolate has set, use red frosting to decorate each cake as desired to resemble festive Christmas ornaments. Serve and enjoy your gluten-free, dairy-free Christmas tree cakes!
Notes
- For best results, ensure the cake is thoroughly cooled before cutting to prevent crumbling.
- If you don’t have a Christmas tree cookie cutter, you can use another festive shape or cut freehand.
- Non-dairy frosting can be homemade or store-bought, choose a vanilla variety for the classic flavor.
- Use full-fat coconut oil for melting with white chocolate to achieve a smooth coating.
- Store the finished cakes in the freezer or refrigerator to maintain firmness, especially in warm climates.
- This recipe makes about 10 sandwich cakes, perfect for sharing or gifting during the holidays.
