- Prepare the Cheesecake Whipped Cream: In a large bowl, use a handheld mixer on medium-high speed or a stand mixer with the whisk attachment to beat the softened cream cheese, confectioners’ sugar, and vanilla extract until the mixture is light and fluffy. Gradually add the cold heavy cream, about ½ cup at a time, beating continually until stiff peaks form. Gently fold in the rainbow sprinkles to incorporate evenly.
- Assemble the Cake Layers: Spread a very thin layer of the whipped cream mixture on the bottom of an 8-inch springform pan. Arrange an even layer of whole Golden Oreos on top of the whipped cream — around 13 to 14 cookies should suffice. Spread another layer of whipped cream over the Oreos, then repeat the cookie layering process until you have four layers of Oreos. Finish by spreading a final layer of whipped cream over the top and sprinkle with additional rainbow sprinkles.
- Prepare for Decoration: Transfer any remaining whipped cream to a piping bag fitted with a large star tip for decorating. If there is no leftover whipped cream, you can skip this step.
- Chill the Cake: Refrigerate or freeze the cake and the whipped cream in the piping bag for at least 4 hours, preferably overnight. This chilling allows the cookies to soften and meld with the cream into a cake-like texture.
