Fruit Ingredients
- 1 can mandarin oranges (15 ounces, drained)
- 2 cups pineapple tidbits or chunks (fresh or canned, drained if canned)
- 2 cups strawberries (sliced)
- 1 cup red grapes (halved)
- 1 cup green grapes (halved)
Dressing Ingredients
- 2 cups mini marshmallows
- 1 tub frozen whipped topping (8 ounces, thawed)
- 3/4 cup nonfat plain Greek yogurt
Instructions
- Drain fruit: Drain the mandarin oranges and pineapple chunks thoroughly if using canned to avoid excess liquid in the salad.
- Mix ingredients: In a large bowl, gently combine all the drained fruits along with the mini marshmallows to evenly distribute them without crushing the fruit.
- Prepare dressing: In a separate bowl, blend the thawed frozen whipped topping with the nonfat plain Greek yogurt until smooth and creamy.
- Fold mixture: Carefully fold the yogurt and whipped topping mixture into the fruit and marshmallow mixture to coat everything evenly without breaking the fruit pieces.
- Chill: Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 1 hour to allow the flavors to meld and the salad to chill before serving.
Notes
- Make sure to drain canned fruit well to avoid watery salad.
- Fresh fruit can be used instead of canned for a fresher taste.
- This salad is best served chilled and consumed within 2 days.
- Mini marshmallows add sweetness and texture — don’t substitute with large ones.
- For a tangier flavor, substitute flavored yogurt or add a splash of lemon juice.
