Instructions

  1. Heat oil: Heat olive oil in a cast iron skillet or Dutch oven over medium heat to prepare for cooking the spices and vegetables.
  2. Bloom spices: Add minced garlic, ginger paste, 1 teaspoon turmeric powder, cumin powder, cardamom, and cinnamon to the hot oil. Stir and let the spices infuse for about 30 seconds, taking care not to overheat the oil.
  3. Sauté onion: Add the diced red onion and sauté for about 1 minute until it’s slightly browned, enhancing the dish’s flavor base.
  4. Add vegetables: Incorporate the diced carrots, diced potato, water, and the remaining 1 teaspoon of turmeric powder. Stir well to coat the vegetables evenly with the spices.
  5. Simmer: Cover the pan and cook on medium heat for 10 minutes, allowing the carrots and potatoes to become almost tender. Stir occasionally to prevent sticking.
  6. Add cabbage: Stir in the finely chopped cabbage along with salt and black pepper. Cover and cook for an additional 5 to 10 minutes until the cabbage is tender but still maintains some texture.
  7. Serve: Remove the pan from the heat. Garnish the Ethiopian cabbage with chopped fresh cilantro and serve hot. This dish pairs wonderfully with rice or flatbread.
