Instructions
- Heat oil: Heat the olive oil in a cast iron skillet or Dutch oven over medium heat to prepare for sautéing.
- Bloom spices: Add minced garlic, ginger paste, 1 teaspoon turmeric powder, cumin powder, cardamom powder, and cinnamon. Stir constantly for about 30 seconds to infuse the oil with the spices, ensuring the oil does not get too hot or burn.
- Sauté onion: Add the diced red onion and sauté for approximately 1 minute until it softens slightly and begins to brown.
- Add vegetables: Add diced carrots, diced potato, water, and the remaining 1 teaspoon turmeric powder. Stir well to evenly coat the vegetables with the spices and liquid.
- Simmer: Cover the pan with a lid and cook over medium heat for 10 minutes. Check with a fork to ensure the carrots and potatoes are almost tender but still hold their shape.
- Add cabbage: Stir in the finely chopped cabbage, salt, and black pepper. Cover again and cook for an additional 5-10 minutes until the cabbage is tender but not mushy.
- Serve: Remove the pan from heat and garnish with fresh chopped cilantro. Serve hot alongside rice or flatbread for a complete meal.
