  • ½ tsp granulated onion

  • ⅔ cup mayonnaise
  • 3 stalks celery, diced
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Lightly coat the chicken breasts and thighs with olive oil. Season them evenly with granulated onion, cracked black pepper, and sea salt.
  2. Bake the Chicken: Place the chicken in a baking dish and loosely cover it with aluminum foil. Bake at 350°F (175°C) for 25 to 30 minutes until the internal temperature reaches at least 165°F (74°C) in the thickest part.
  3. Cool and Dice: Let the baked chicken cool for at least 10 minutes, then refrigerate for a minimum of one hour. Once cooled, dice the chicken into pieces about ¼ inch long and ½ inch wide.
  4. Combine Ingredients: In a large bowl, mix the diced chicken with the diced celery and mayonnaise. Stir thoroughly to combine all ingredients well.
  5. Chill and Marinate: Cover the bowl and refrigerate for at least 1 to 2 hours, or preferably overnight, to allow the flavors to meld beautifully.
