Pumpkin Cupcakes

Vanilla Buttercream
- 1 and 1/2 cups (340g) unsalted butter, softened to room temperature
- 6 cups (720g) confectioners’ sugar
- 6 Tablespoons (60ml) heavy cream, half-and-half, or whole milk, at room temperature
- 2 teaspoons pure vanilla extract
- Salt, to taste

- Gel food coloring: Leaf Green, Fuchsia + Violet, Super Black, Orange
- Small candy eyeballs
- Large candy eyeballs
- Sprinkles (optional)
- Oreo Mini cookies
Piping Tools
- 2 piping bags and 2 couplers for monster cupcakes
- 1 piping bag for spider cupcakes
- 3 piping bags for jack-o’-lantern cupcakes
- Piping tips: small open star tip (Wilton #21), large petal tip (Wilton #125), small round tip (Wilton #4)
Instructions
- Make the vanilla buttercream: With a handheld or stand mixer fitted with a paddle attachment, beat 1 and 1/2 cups softened unsalted butter on medium speed until creamy, about 2 minutes. Add 5 and 1/2 cups confectioners’ sugar, 6 tablespoons heavy cream, and 2 teaspoons vanilla extract. Beat on low speed for 30 seconds, then increase to medium-high and beat for 2 minutes. Add a pinch of salt if too sweet and stir by hand to remove air bubbles if necessary.
- Adjust buttercream consistency: If frosting is too thin, add up to 1/2 cup more confectioners’ sugar; if too thick, add heavy cream one tablespoon at a time until desired consistency is reached.
- Tint the frosting: Divide frosting into 5 bowls for the different colors needed: green, purple (made by mixing Fuchsia + Violet), black, orange, and leave one bowl white for spider cupcakes. Add gel food coloring to each bowl until desired color is reached. Use a toothpick with black gel to tone down bright colors if needed.
- Decorate Green Monster Cupcakes: Fit a piping bag with a small open star tip (Wilton #21) and fill with green frosting. Pipe a spiral from outside to center on each cupcake. Place a large candy eyeball in the center, pressing gently.
- Decorate Purple Monster Cupcakes: Fill a piping bag with purple frosting and a small open star tip. Pipe stars all over the surface. Press small candy eyeballs into the frosting and add optional sprinkles.
- Decorate Jack-o’-Lantern Cupcakes: Use three piping bags fitted with large petal tip (Wilton #125) for orange frosting, small open star tip (Wilton #21) for green, and small round tip (Wilton #4) for black frosting. Pipe curved orange lines from top to bottom to create pumpkin segments. Pipe green pumpkin stems and use black frosting to create eyes, nose, and mouth in spooky or goofy styles.
- Decorate Spider Cupcakes: Spread white frosting smoothly on cupcakes using a small offset spatula or knife. Using a piping bag with a small round tip and black frosting, pipe 3 criss-crossing straight lines creating 6 triangular sections. Connect these with curved lines to form a web. Press half an Oreo Mini onto the web for the spider’s body. Pipe two small black dots for eyes and attach mini candy eyeballs. Add 8 frosting lines as spider legs around the Oreo.
- Storage: Store decorated cupcakes uncovered at room temperature for a few hours before serving. Cover and refrigerate leftovers for up to 5 days, preferably in a cupcake carrier.
