  • Author: lilan
  • Total Time: 4 hours 10 minutes (HIGH) or 6 hours 10 minutes (LOW)
  • Yield: 3-4 servings 1x

Description

This Crockpot Cream of Mushroom Chicken is a comforting and creamy slow-cooked dish that combines tender chicken breasts with a rich mushroom sauce made from sour cream, condensed cream of mushroom soup, and fresh mushrooms. Perfect for an easy weeknight meal, it requires minimal prep and delivers hearty flavors with a velvety texture.

Ingredients

Scale

Chicken

  • 1 ½ pounds boneless skinless chicken breasts (about 3 medium-large breasts)
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon onion powder

Sauce

  • 1 cup sour cream
  • 10.5 ounces condensed cream of mushroom soup
  • ¼ cup chicken broth
  • ½ teaspoon minced garlic or 1 clove fresh minced garlic
  • 1.5 tablespoons all purpose flour
  • 16 ounces sliced mushrooms (23 cups)

Optional Garnish

  • Fresh minced parsley

Instructions

  1. Prepare the Chicken: Trim any excess fat or skin from the boneless skinless chicken breasts. Season them evenly with salt, black pepper, paprika, and onion powder. Arrange the seasoned chicken breasts in the bottom of a 6-quart slow cooker.
  2. Make the Mushroom Sauce: In a medium mixing bowl, whisk together the sour cream, condensed cream of mushroom soup, chicken broth, minced garlic, and all-purpose flour until smooth and fully combined. Stir in the fresh sliced mushrooms to incorporate them evenly into the sauce.
  3. Combine and Cook: Pour the prepared mushroom sauce mixture evenly over the chicken breasts in the slow cooker, making sure the chicken is well coated. Cover the slow cooker with its lid and cook on HIGH for 4 hours or on LOW for 6 hours, until the chicken is tender and fully cooked through.
  4. Serve: Once cooked, optionally sprinkle fresh minced parsley over the dish for a bright, fresh garnish. Serve the creamy mushroom chicken hot alongside your favorite sides.

Notes

  • Using fresh mushrooms adds extra flavor and texture, but you can substitute with canned mushrooms if needed.
  • For a thicker sauce, you can add a little more flour or cook uncovered for the last 30 minutes to reduce the sauce slightly.
  • This dish pairs well with rice, mashed potatoes, or egg noodles to soak up the creamy sauce.
  • Make sure chicken is cooked to an internal temperature of 165°F (74°C) before serving.
